Safari Tabs -- you just have to enable them in the preferences. They're disabled by default.

Finding windows -- this is one of the major differences between OS X and windows. There's several things you can do:

• [i]Don't[/i] have each window take up the full screen -- just have it take up as much as it needs
• Switch between applications (cmd-tab, or use the dock) and keep your windows arranged logically inside each app
